How Can I train A 15yr old retired race horse?

Let me start off by telling you a little bit about myself and stating that I'm not what you call experienced. I used to ride when I was younger, But that was 13 years ago. I have a great passion for horses and now that I am an adult I'm trying to start over. I'm starting to take lessons to build my confidence again. I'm working as a stable hand at a barn with race horses(pacers). The owner has two retired mare's and is willing to let me work with one of them. The mare that I have been trying to establish a trust with will allow me to acomplish all the grooming needs. I'm wondering if it is possiable to train her, at the age of 15 how to carry a rider, when she has never done so. If so where do I begin? Can anyone exsperienced give me some insight and/or advice.
