Hi - Carrots and/or apples are the very best treats for horses or donkeys and they love them - they are both natural foods (not processed) which makes them very desirable as treats. I've seen manufactured treats at my local feed store and the list of ingredients on them is mind-boggling - I'd stick to carrots or apples - carrots are my preference due to their ease of carrying and lack of 'messiness'.
As for grooming a heavy winter coat, you'd do it pretty much like any other coat (personally I don't believe in clipping a horse for any reason - nature never intended them to be clipped, and the closer we can keep them to what nature intended the better off they are.)
Might need to use a stiffer brush to get through the coat.
